Healthy Cinco de Mayo!

And Happy Cinco de Mayo!

While many believe that Cinco de Mayo, or the 5th of May, is Mexico’s Independence Day, it is actually the day the Mexican Army was victorious over the French Empire in 1863.

Believe it or not, it is actually more widely celebrated in the United States as a commemoration of Mexican-American culture, but most importantly, as a reason to eat very yummy Mexican food!

Mexican food is my favorite! I am extremely guilty of over-eating, especially when it comes to guacamole, burritos, and fried ice-cream! Still, there is no reason why these foods have to be so bad for you. That is why I found a delicious and healthy recipe for Cinco de Mayo! The recipe is for:

Sweet Potato Black Bean Quesadillas!

I will warn you that these quesadillas are vegan, so there is no cheese in the recipe. However, I am a cheese lover! My quesadillas will have plenty of cheese! It is a celebration after all!
